The breed is medium size uni colored and white. The adult elliottdale sheep requires shearing twice a year. Rams can be horned and ewes are polled. The weight of mature elliottdale ram is 70 kg 155 lb.

The elliottdale is a carpet wool sheep which was developed at the elliott research station in tasmania. The fleece weighs about 6 kg which has a staple length of 120 to 200 mm. They produced light colored handwoven textiles featuring distinct woven knots loops as well as natural multi color flecks from the coat of the sheep from which they got the wool from which the carpets were produced. Bloomberg reports that said sheep range anywhere from 500 000 to 1 million each.
